Piece of Cake

“From the turrets high above the world in our medieval castle, our trade secrets are carefully being guarded by our cake army.”  Well…not really, but we love to think of our studio+bakery as our Fortress of Fondant while we toil away creating our Confectionary Couture.  And we know that no matter how beautiful they look, the flavor of our cakes is paramount.

When working with a fashion stylist, you might be asked “What kind of mood do you want to create with your new look?”  Whether it’s romantic or sultry, powerful or sophisticated, what you wear on the outside can affect how you feel on the inside.  Your clothes speak volumes about who you are and how you approach life.  If you look good, you feel good and New Yorkers never shy away from taking risks with their fashion.

The same can be said about choosing the flavors for your wedding cake.  While the outside reflects the design choices made by the couple and their baker, the interior of the cake is how you can transport your guests to another level of confectionary bliss.  With a single forkful, they can be lifted onto a different plane of emotions;
one of taste and feel that elicits a sugary high filled with buttercream elation.

Eyes can only tell us so much.  To be able to experience a tactile sensation can elevate the interpretation of whatever is being presented.  For example, imagine you have just slipped on a double-knit cashmere sweater. To experience the full sensation of just how luxurious cashmere can be, you have to feel that glorious angel-soft plushness against your skin. Your cake should resonate not only with its looks, but its feel.  It should be moist and textured and have a sensual density that will hit your mouth with a 1-2 punch.

Creating a flavor profile for your cake can be daunting, but think of it less as a dessert and more like an experience.  A citrus cake with passionfruit and toasted coconut fillings can whisk your tastebuds away to a tropical paradise.  Your guests might imagine themselves on a sandy beach with the sun warming their faces as they devour your wedding cake in the Grand Ballroom at The Plaza Hotel.  A dark chocolate Guinness cake with peanut butter bacon fillings would be a sophisticated nod to those smokehouse lovers who like a little sawdust under their feet.  Use whatever you enjoy in life as your flavor inspirations: are you passionate about flamenco dancing?  Then how about a little Spanish saffron added to your vanilla cake for a decadent twist?

The possibilities of tastes and textures for your cake are limitless.  The only flavor we won’t do is failure.
