Q: I'd like a cheesecake for my wedding. Will you make it?

A: We adore cheesecake! However, it's not a very good choice for a decorated wedding cake. According to most health departments, cheesecakes should not be presented in room temperature settings for more than fifteen minutes. We expect that our cakes will be on display for quite some time during a reception, so cheesecakes do not represent ideal choices. Our fillings are prepared with pasteurized and cooked egg whites, which are less prone to bacteria and are lighter and more stable.
